Yo Ho Ho and a Bottle of Rum

....well not quite but almost.


One of my co-workers turned 40 recently and I asked him what kind of cake he would like me to bake for him. He said he wanted something with alcohol in it, on it or around it and I asked him what his tipple was. His response - “Pirates like rum”.

Although I’ve already made Dorie's rum drenched pound cake I googled for a new recipe and found one on a blog called Eatables. The recipe calls for a butter rum glaze which uses a LOT of butter and a LOT of rum.

The photo is terrible but you can see the very appropriately themed breath “mints” which I found at a very cool store in Wellington called Iko Iko – it’s one of those tacky gift shop kind of places selling the same marvellous miscellany like might find at Archie McPhee's. I'm very sad to report that I didn't find a yodelling pickle at Iko Iko!

Don't hate me if you have an earworm now.

If I had known you needed one, I have two FABULOUS rum cake recipes!! One might be almost exactly what you found - sounds very similar. The other is an incredibly decadent chocolate rum cake. Yummy!
